MANGAI SADAM (MANGO RICE)
1. Raw mango-100g
2. Carrots-100g
3. Basmati rice-1kg
4. Ghee-50ml
5. Mustard seeds-4g
6. Split urad dal-4g
7. Bengal gram dal-4g
8. Split cashew nut-4g
9. Whole red chilly-5g

METHOD-
1. Boil rice and keep aside
2. Peal and grate raw mangoes and carrots
3. Take pan and heat ghee
4. Put whole red chilly, mustard seeds, spilt urad dal and Bengal gram asafetita powder
5. Allow it to crackle then put grated carrots and mango and sauté it till it is cooked
6. Add little turmeric and salt
7. Now put the rice and mix it well witth a perforated ladle
8. Check for seasoning and serve hot

Paneer Rice
Ingredients
Fried paneer cubes- 1 pack
curd-3/4 cup
Basmathi rice-2 1/2 cups
turmeric powder-1/4 tsp
chilli powder- 11/2 tsp or acc to taste
coriander powder- 2 tsp
kasoori methi- 1tsp
ginger garlic paste- 1 to 1 1/2 tsp
garam masala- 1/4 tsp
Onions- 2 medium, sliced
coriander leaves- a few chopped finely
mint leaves- a few chopped finely
salt to taste
yellow/orange food color- a pinch(optional)
For seasoning
oil- 2 tbsp
butter - 2 tbsp
bayleaves- a few
cinnamon- 1 stick
cloves- 2
cardomom- 1
star anise-2
saunf-1/4 tsp
Method
Soak the basmathi rice in water for 10 minutes.
In a bowl add curd , chilli powder, turmeric powder, corainder powder, kasoori methi, ginger garlic paste, salt and garam masala powder. whisk well , add the paneer pieces to it and keep aside for 2 hours.
Drain the water from the rice add 2 tsp of oil and microwave it for 2 - 3 minutes.
Heat butter + remaining oil in a pan and add cinnamon, cloves, cardomom, star anise, saunf,bayleaves and sliced onions. Fry for a some time till the onions turn transparent and then add the paneer with the curd. Fry for a couple of minutes in medium flame till the oil seperates and then add the chopped coriander and mint leaves. remove from fire.
Add rice and water in the ricecooker in the ratio of 1: 1 3/4 and add the prepared paneer masala to it. cook till done, garnish with coriander leaves and serve hot with raita.
note
You can deepfry onions and cashews till golden brown and garnish on top.
Palak Rice
Ingredients
Palak – 1 bunch
Cashews- 8 to 10 pieces
Coconut grated- 1 to 2 tsp
Green chillies-4 or acc to taste
Lemon -1
Coriander leaves(optional)- a few
Method
Wash the palak leaves and cut it.
In a pan just add the palak and sauté it for 2 to 3 mins. No need to add water.
Then grind it with cashews,coconut, green chillies, salt and corianderleaves(optional).Heat 4 tsp of oil in a pan , and fry the ground paste for a few mins. ( do not fry it for a very long time or cover it with lid as the colour may change). Mix this with already prepared plain rice.
Sprinkle lemon rice in the rice and serve hot
Masala Pachapayaru Sadam {green lentils rice ]
Masala Pachapayaru Sadam
Ingredients:
Pachaipayaru - green gram
Green gram sprouts - ¼ cup
Cooked rice - 1 cup (loose form)
Garlic - 4 pods
Chilli powder - 1 spoon
Garam masala powder - 1 spoon
Curry leaves
Tomato - 1
Ghee - 2 spoons
Salt
Small onion - 6
Green chilli - 1
Green gram sprouts - ¼ cup
Cooked rice - 1 cup (loose form)
Garlic - 4 pods
Chilli powder - 1 spoon
Garam masala powder - 1 spoon

Method:
Cut green chilli, garlic, onion and tomato into pieces.
Heat oil in a pan and add green chilli, garlic, curry leaves,
onion, tomato and saute.
Add masla powder, chilli powder, salt and fry well.
Add cooked rice, sprouts mix well and remove from stove.
