STUFFED CAPSICUM
Ingredients :
Medium sized capsicums - 5 to 6
Finely cut boiled potatoes - 1 cup
Finely cut onions - 2 cups
Grated paneer - 1/2 cup
Green chillies - 3
Tomato puree- 1 1/2 cup
Garam masala powder
cumin powder
chaat masala
red chilly powder
coriander powder
turmeric powder and salt to taste.
Method :
Wash capsicum ,slice off thinly from the top and remove seeds to make it hollow and keep aside .
For the stuffing :
Mix boiled potatoes , 1/2 cup finely cut onions , finely cut green chillies ,grated paneer , garam masala powder, cumin powder , red chilly powder- 1/2 tsp each , salt and cut coriander leaves and mix well..
Stuff the hollowed capsicums with this mixture and place cut top portion of each capsicum on it and pierce a toothpick from top to keep them in place.. keep aside...
For the gravy :
In a pressure cooker ,saute 1 1/2 cups of finely cut onions till they turn slightly golden ..
Add 1 tsp red chilly powder and tomato puree and stir for a min .
Add 1 tsp coriander powder 1/2 tsp turmeric powder and 1/2 tsp cumin powder and salt and cook till the oil separates. add little water..
Carefully place the capsicum in the gravy and cook upto 1 whistle .garnish with fresh coriander leaves..
