STUFFED BRINJALS

Ingredients :

Small brinjals - 1/2 kg
Grated coconut - 1 cup
Groundnuts - 1/2 cup
Ginger - 1 inch piece
Green chillies - 3

Mustard seeds - 1 tsp
Red chilly powder - 1 tsp
Coriander powder - 1 tsp
Turmeric powder - 1/2 tsp
Oil - 1 tsp
salt to taste..

Method :

Grind coconut, groundnuts ,ginger , and green chillies to a paste, using minimum water.
Add the red chilly powder ,coriander powder , turmeric powder and salt .mix well and keep aside.
Wash and slit the brinjals into four without cutting them ,through and keeping the stalk intact.
Apply some salt inside the slits and stuff each brinjal with the ground paste.
Heat some oil and mustard seeds ,after they have spluttered ,add the left over coconut- groundnut
paste and stir for a min.
Add the stuffed brinjal and stir gently.
Add salt and enough water to make medium thick gravy .cook the brinjals  up to 1 whistle .
Garnish with coriander leaves and serve hot ..
