VANGI BHATH

INGREDIENTS :

2 cups - cooked rice
5 nos - brinjals
1/2 cup - shredded coconut

3 tsp- gram dhal
1 1/2 tsp - dhania
1/4 tsp - fenugreek seeds
6 nos - dry chillies
1/4 tsp - turmeric powder
1/4 tsp- asafeodita
2 tsp - oil
2 tsp - ghee
salt to taste
curry leaves


METHOD :

Wash and cut the brinjals and saute it with 2 tsp of oil,turmeric powder and salt.

Spread it in plate and let it cool down..

Fry chilli, asafoetida,gram Dal ,fenugreek seeds and coconut separately without oil and grind as coarse powder.

In a frying pan , heat oil , add mustard seeds and curry leaves..

When the mustard starts to spluttering , add rice , salt , fried brinjals, masala powder and 2 tsp of ghee and mix well...
